PROCESS
Fermentation of base wines: 30 days malolactic fermentation in french oak barrels. 2nd fermentation or prisse de mousse: 55 days. Ageing on lees: 40 months.

Alcohol: 12,90% vol.; Sugar: 11,50 g/l.; Total acidity: 7,1 g/l.
SERVING TEMPERATURE
Serve at 6ºC to 8ºC.
TASTING NOTES
SIGHT
Intense gold yellow with a pale salmon tint (and a fine persistent mousse).
NOSE
Aromatic and complex nose given by a mix of toasty, vanilla, coconut, hazelnut and almond notes.
PALATE
Intense, mouthfilling and full-bodied sparkling wine with a refreshing acidity and complex lactic flavours. Long ageing on yeast lees gives maturity notes of ripe fruit, toast and brioche.
