WINE-MAKING PROCESS
Both Merlot and Pinot Noir grape juice are made by crushing and by separating the skins from the liquid before fermentation.
Malbec must is obtained from the free-run juice hours later after being put into vessels.
The whole blend is fermented in stainless steel tanks at low temperature after settling and adding cultured yeasts.
Once the alcoholic fermentation is completed, the lees are racked and the wine is kept in stainless steel tanks for malolactic fermentation.
The process of bottling takes place, after the wine is filtered.
