WINEMAKING PROCESS
The grape clusters are collected in plastic containers and taken to the winery, where the liquid is separated from the solids by means of bladder wine presses.
A pre fermentation cold maceration at 8°C temperature takes place for 24 hours to allow the settling of sediments.
Fermentation, with the addition of cultured yeasts, at 13° - 16° C temperature is completed after 20 - 25 days with daily pumping over.
After fermentation is finished, the wine is transferred into French and American new oak barrels for a period of 12 months.
After ageing, a selection of oak barrels is decided on to achieve the final blend.
